Namak pare or Nimki

Namak Pare or Nimki is crunchy, light and salty snack which you can have any time of the day with a cup of hot tea. Its usually made during Diwali. From the same dough you can make both plain and masala namak pare.

Ingredients:-

All Purpose Flour 2 cups
Oil
Kala Jeera or kalaonji 1 tbsp
Salt

Method:-

1) In a deep vessel take 2 cups of flour, 4 tbsp of oil, salt and kalonji or kala jeera . Mix the flour well with the oil till it starts looking like bread crumbs.

2) Add water and knead it to make a tight dough.

3)Now take a pan or kadhai and pour enough oil for frying.

4)Take a small ball shape dough and roll it with the help of a rolling pin . Don't make it too thick or too thin.

5)You can roll it to any shapes you want and with a sharp knife cut it criss cross to give diamond shapes.

6)When the oil is hot enough put the diamond shaped pieces. Repeat the above process till the dough is finished.

7) Fry it in small batches, and don't put all at a time so that they will cling to each other.

8) Fry it in medium flame till it turns brown from both the sides and Take out the fried pieces in a paper towel to absorb the excess oil.
9)Let it be cool and serve it at any time.

Notes:-

If you want masala nimki or namak pare just add chat masala to the hot namak pare and mix it well, it tastes really good.

You can also keep it for days in an air tight container.

You can make any shapes you want, round, nut shaped, thin long strips, diamond ..anything you want.
