Spicy Poha

Poha which is also called flattened rice or beaten rice is very popular in India, Nepal and Bangladesh. This rice flakes becomes fluffy when added to liquid. as they absorb water. This is easily digestible and an easy and light fast food prepared in a variety of methods.

In some parts of India its eaten raw washed with water, and mixing sugar/jagerry, salt , milk/curd, bananas and even sometimes grated coconut. While in some parts its cooked using moistened poha and in some parts its fried in oil to be eaten as dry snacks which can be kept for few days .
Its quite healthy and a good filling for a long time. Its normally consumed for breakfast or snacks.

Now coming to the Recipe. This recipe i am posting is made by my beloved husband which he made specially for me on the weekend for breakfast.
What else a wife can expect on a lovely weekend with Yummy n delicious Poha and a cup of hot ginger tea.
For making Poha  for 2 persons you need :-


Ingredients:-
2 cups poha (flattened rice)
2 tbsps vegetable/ canola/ sunflower cooking oil
1 tsp mustard seeds
Turmeric powder
1tsp amchur powder
1tsp sugar
5-6 curry leaves
2 green chillies slit lengthwise or chopped (optional)
1 medium onion chopped fine
1 large potato sliced very thin
Half cup cut Cauliflower( optional)
Half cup green peas
Handful of unsalted peanuts (skins removed)
Juice of 1/2 a lime
Salt to taste
Chopped coriander to garnish





Method:-
Take the Poha in a sieve and wash for 2 mins under running water and keep it aside to drain.

Heat the oil in a pan and add oil, after the oil is heated in a medium flame add mustard seeds, when it start
spluttering add curry leaves and green chillies.Then add the onions till it turns slight brown .

After that add potatoes ,cauliflower florets and peanuts and fry for sometime and cover it in a medium flame for 2-3 mins. Here you can add little salt and a pinch of turmeric powder to it..

In the meantime mix salt, 1tsp of sugar(optional), pinch of turmeric powder, chilli powder or chilli flakes, and amchur powder well with the poha kept aside.

Then add peas to the potatoes and cook for a min. Now add the poha to the above mixture and mix it well with all the ingredients and cook on a slow medium flame for 2-3 minutes. Put the lime juice and mix it well and turn the flame off.

Garnish with chopped cilantro and the delicious poha is ready to be served.

Tips:-

You can enjoy it with aloo Bhujia .

You can also garnish it with grated coconut.
