Urad dal white 1 cup
Rice 2 tbsp
Orange food color
Salt
Sugar Syrup:-
1 cup sugar
Water
Rose essence or any essence you prefer( optional)
Cardamom Powder
Lemon juice
Soak the urad dal and rice (if you have rice flour you don't have to soak) in water for 1-2 hours.
First of all we will make the syrup and then the jangiris.
In a pan add 1 cup sugar and around 1/2-1 cup of water just that the sugar is immersed well. Boil it untill the sugar dissolves and then add the cardamom powder and 1/2 tsp of lemon juice so that it wont form crystals.( you can add essence here)
In the mixer put the soaked dal, rice and mix it well adding little water so that it will become fluffy and a smooth batter is made. Don't add much water.
In flat pan pour oil about an inch and heat the oil.
Take the batter in a bowl add food color, pinch of salt and mix it well.
Now take cloth or zip lock bag and with the help of a hot nail make a hole in the zip lock bag.
Pour the mixture in the bag and try to make 2-3 jangiri in a plate so that your hand will be little perfect before doing it in the oil.
In a medium flame make jangiri. Make 3-4 jangiri at a time. Turn the side when one side changes the color.
Fry till its little crispy( if you want crispy) and remove it from oil and add it to the syrup. Let it soak in the syrup well.
Now take out the jangiri and serve it hot.
Serve the hot and crispy jangiri in a plate and garnish with crushed nuts and make your Diwali a grand one with home made sweets.
You can also add 2 tbsp of rice flour after grinding the urad dal in the mixer.
You can add rose essence or saffron to the syrup if you want the flavor. But adding rose essence gives a nice flavor and aroma.
