Cabbage Kofta

 It's been a very long time since I had Cabbage Kofta  , so thought of making the same for tonight and share the recipe with you all. I learned  this recipe from my maternal grand mom a few years ago.. .
I have tried my best to put together everything to make the recipe a success , hope you all will enjoy the cooking!!!



Ingredients:-


Cabbage 1 small
Potato 1 Medium Boiled 
Onion 1 medium
Ginger garlic paste 1 tbsp
Green chilli 1 finely chopped
Cumin seeds 1tsp
Sugar 1 pinch of
Bay leaf  1
Turmeric powder 2 pinch of
Coriander Powder 2 tbsp
Cumin Powder 1/2 tbsp
Chilli Powder 1/2 tsp
Curry powder 1 tbsp
Garam masala
Coriander Leaves finely chopped


Method:-


For Koftas:-


Wash the cabbage and chop it finely.  
Take a nonstick pan put 1/2 tsp of oil, and then add chopped cabbage and sprinkle little salt (so that all the water from the cabbage will come out) and cook it 5 minutes until all the water evaporates.


Take a Bowl take out the cabbage, add grated/mashed  boiled potato ( add according to the requirement and don't add much potato) for binding, add cumin and coriander powder 1/2 tbsp, chilli powder 2 pinch of,
salt , chopped coriander leaves and mix it well.
Now make balls from the mixture.


 In small Bowl take 2 tbsp gram flour( besan), add salt and little water, mix it well so there is no lumps.
The mix should not be thick nor much thin. it should be of medium consistency so as to coat the koftas.

Take a pan add oil , when the oil is hot add the koftas dipped in the batter and fry it till it becomes brown.
(Make sure the oil is hot enough before you put the koftas otherwise it might break )



Now take out the koftas in a paper towel.


For Gravy:-


Take a pan add 2 tbsp oil, put a pinch of sugar . When the sugar turns brown add cumin seeds, bay leaf. 


Then add chopped onion and cook till it turns golden brown, then add ginger and garlic paste and cook for about 2 minutes till the raw smell disappears.


Add turmeric powder, chilli powder, curry powder, coriander powder and salt and cook it for a minute.


Then add chopped tomatoes.


Cook it till it becomes pulpy and oil is separated from it.


Add 2 cups of  boiling water to the masala and boil it for 5 minutes. You can adjust the amount of water according to your requirement. If you have some mashed potato left you can use it here in the gravy for a thick consistence.


Then add the koftas and cook for 2-3 minutes in a medium flame.


Garnish it with chopped coriander leaves and garam masala.



Now its ready to serve hot with rice or any indian bread.

Tips:-

You can also use cashew nut powder in the masala after mixing the masala powders.

    Just curious why do u add the pinch of sugar in the start? Is it for the color,taste or aroma?

    Its really great to hear that you liked my recipes.
    Well adding a pinch of sugar in hot oil and adding onions after it turns reddish brown give a nice color to the curry.You can use this process with any masala curries. Hope i have cleared your doubts.
