Soaking of Sabudana

Sabudana is normally used when anybody is keeping fast. . Its cooked in different varieties like kheer or pudding, sabudana khicdi or spicy tapioca, sabudana vada or tapioca fritters. This tiny little pearly white
balls not only looks cute but also tastes good. To soak it in a proper way is the most important part of all the recipes of tapioca or sabudana. There are varieties of sabudana also available in market ranging from small to large size balls. Normally i use the medium sized balls...
For this you need...

Sabudana or Tapioca 1 cup
Water

Method:-

Wash the sabudana 3-4 times till the white starchy water drains out.

Soak it for around 30 minutes in water above the sabudana quantity .

Now drain the water and soak it in around 5 tbsp of water and cover it as it gives good result.

If you want to eat in morning or afternoon you have to soak it overnight and if you want it at night then you can soak it in the morning.

It becomes fluffy and the size doubles after soaking.

Drain all the water properly after its soaked .

Now its ready to cook any kind of recipe with this sabudana.

You can also keep it for a week or two in an air tight container.

If  you ever forget to soak it at night and want to eat then you can soak for at least 3-4 hours in little warm water.
