Method:-
Cut the Cauliflower and put the florets in warm water with pinch of turmeric for some time and drain it.
Take a pan put 2 tbsp oil and fry the cauliflower and potatoes until its cooked sprinkling some salt.
Do not over cook it . In the same pan fry the onions cubed and the bell peppers and keep aside.
In kadhai/ wok take 1tbsp oil add a pinch of sugar( sugar gives color to the curry), when the sugar turns brown add cumin seeds, cinnamon , cardamom .
After it splutters add chopped onion and fry it until its color is slightly changed, then add chopped garlic and ginger and cook for some time.
Then add the turmeric powder, coriander powder, chilli powder and any curry powder ( I sometimes use MDH/ Everest kitchen king masala ).
Cook for some time sprinkling little water to it , then add cashew nuts and fry for 2-3 minutes in a medium flame and then add tomato and cook well until all the tomatoes are mashed properly.
Then transfer it to the blender and allow it to cool for sometime and grind it to a smooth paste.
Now take 1 small slice about 1 cube butter in the pan add that paste and then add the cauliflower and potatoes. After its mixed well with the gravy add about 1/2 a cup water, salt and then add the cubed onions and Bell peppers and cook it for 2 minutes till it boils. Here you can add fresh cream and garnish with coriander leaves.
