Veggie Skillet.. !!! Umm.. The Name itself says it all. The skillet loaded with all the veggies. Usually we go to Denny's or I-hop to have skillet at late nights. I just Love it. Its yum.. yumm .. Yummy.
Its prepared with seasoned red-skinned potatoes, roasted bell peppers, Beans and mushrooms, onions and broccoli on a hot sizzling skillet topped with cheese and scrambled or half fried eggs with spinach.
Now coming to the Recipe.. Here i have not used eggs..
Now in the 1st pan fry the mushrooms for about 2 mins and take it out.
Serve it hot with hash brown and a glass of chilled coke and have the feeling of dining out.

Ingredients:-
Potatoes 3-4 small Red Skinned cut into 4 parts
Broccoli cut into Florets
Mushrooms
Green bell Peppers thinly sliced
Beans around 10 ,each cut into 2 halves
Onion yellow 1 medium thinly sliced
Butter( 1 cube) ( optional)
Baby Spinach 10-15 leaves washed
For Garnishing:-
Italian seasoning
Mozzarella cheese shredded (optional )
Utensils:-
2 skillets/ pans
Wash all the veggies well .In the whole preparation remember not to overcook any vegetables.
Take some water in a pan and make it to boil and steam the broccoli and beans for about 2-3 mins and drain it well.
Take a skillet or wok or pan, pour 1/2 tsp of oil, fry broccoli and beans for about 5 mins sprinkling some salt and then keep it aside.
Take another pan and take 1/2 cube of butter and 1/2 tsp of oil. , add the potatoes, sprinkle some salt and cook until it turns brown from all the sides in a medium flame.
Now in the 1st pan fry the mushrooms for about 2 mins and take it out.
Then put 1/2 tsp of oil and fry the onions and green bell peppers and keep them aside.
Once the potatoes are done, add all the fried vegetables, put the other 1/2 cube of butter and saute it for 2 mins with the spinach.
Now shift the real hot veggies on a plate and garnish with Italian seasoning and cheese and microwave it for 30-45 secs.

Tips:-
You can also bake the veggies top with cheese in the oven after all are cooked in the pan before serving.
You can also omit the cheese and butter if you want to.
You can also add two scrambled eggs or two half fried eggs on the top at the end.
